Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan lined with parchment paper, lightly greased.
  2. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Press about two-thirds of the cookie dough evenly into the bottom of the prepared pan.
  7. Unwrap the Poptarts and arrange them in a single layer over the cookie dough base.
  8. Crumble the remaining one-third of the cookie dough evenly over the layer of Poptarts.
  9. Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
  10. Let the bars cool in the pan on a wire rack for at least 1-2 hours, or until completely cool.
  11. If adding a glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth, then drizzle it over the cooled bars. Slice into squares or rectangles.
