- 1 lb lean ground beef (80/20 or 90/10)
- 1 packet taco seasoning
- ¼ cup water (or according to package directions)
- 8 oz cream cheese, softened
- 1 packet dry ranch seasoning mix
- 1 cup shredded cheese (Mexican blend or a combination of sharp cheddar and Monterey Jack)
- Mini flour tortillas or wonton wrappers (for the bites)
- Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin. If using wonton wrappers, press one wrapper into each cup of the mini muffin tin. If using mini flour tortillas, either use them as is or cut smaller circles and press into the muffin tin.
- In a large skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks. Drain any excess grease from the skillet.
- Return the skillet to medium heat and add the taco seasoning and ¼ cup of water. Stir well and let it simmer for 2-3 minutes.
- Reduce heat to low, add the softened cream cheese and dry ranch seasoning mix, stirring until fully melted and incorporated. Stir in half of the shredded cheese into the beef mixture.
- Spoon 1-2 tablespoons of the beef and cheese filling into each prepared wonton or tortilla cup. Top each with a sprinkle of the remaining shredded cheese.
- Bake for 12-15 minutes until the wrappers are golden brown and crispy, and the cheese is melted and bubbly.
- Remove from the oven and let cool in the tin for 5 minutes before carefully removing. Serve immediately with your favorite taco toppings.
