  • 1 teaspoon Ground Cinnamon
  • 16 Tablespoons Unsalted Butter – softened to room temperature

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9-inch by 9-inch metal cake pan by greasing it lightly with butter and lining the bottom with parchment paper for easy removal.
  2. In a large mixing bowl, combine 1/4 cup granulated sugar, 1 teaspoon ground cardamom, and 1/4 teaspoon ground cinnamon. This mixture will form the fragrant base of your cake. Set it aside.
  3. In another bowl, whisk together 4 tablespoons of vegetable oil and 3 large eggs until the mixture is smooth and well combined. You should see a light yellow color; this is an indicator that your eggs and oil have emulsified properly.
  4. Add 1/2 cup of sour cream and 1 tablespoon of vanilla extract to the egg mixture. Stir until fully incorporated, then set aside. The mixture will be thick and creamy.
  5. In a separate bowl, whisk together 3/4 cup of granulated sugar, 2 cups of cake flour, 1/2 teaspoon of baking powder, and 1/2 teaspoon of kosher salt. Make sure there are no lumps; this will ensure an even texture in your cake.
  6. Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula until just combined. Be careful not to overmix; you want to see a few flour streaks remaining for the best texture.
  7. Pour half of the batter into the prepared cake pan, using a spatula to spread it evenly. Sprinkle half of your reserved cardamom-sugar mixture over the batter. This will create a lovely sweet layer.
  8. Pour the remaining batter over the sugar layer, smoothing it out gently. Finish by sprinkling the rest of the cardamom-sugar mixture on top. The sugar will create a delightful crust as it bakes.
  9. Bake in the preheated oven for 30 minutes. The cake is done when the edges are golden and a toothpick inserted in the center comes out clean. Avoid opening the oven door too early to prevent collapsing.
