This Savory Cheddar Beef Bacon Dutch Baby is a delicious twist on the classic German pancake, featuring a fluffy, golden-brown base filled with crispy beef bacon and melted cheddar cheese. Perfect for brunch or a cozy dinner, it’s a comforting meal that’s surprisingly simple to make.

Ingredients

Scale
  • 4 large eggs
  • 1 cup whole milk (or 2% milk or almond milk)
  • 1 cup all-purpose flour (or gluten-free flour blend)
  • 1 cup shredded sharp cheddar cheese
  • 1 pound lean ground beef
  • 4 slices beef bacon
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon garlic powder
  • 2 tablespoons unsalted butter (or dairy-free spread)
  • Optional: thyme or rosemary for extra flavor

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Add the beef bacon and cook until crispy. Drain excess fat and season with salt, pepper, and garlic powder. Set aside.
  3. In a mixing bowl, whisk together the eggs, milk, and flour until smooth. Stir in the shredded cheddar cheese and a pinch of salt.
  4. In a large oven-safe skillet, melt 2 tablespoons of butter over medium-high heat until bubbling but not browning.
  5. Pour the batter into the hot skillet, then evenly distribute the beef and bacon mixture on top.
  6. Place the skillet in the preheated oven and bake for 20-25 minutes, or until the edges are puffed and golden brown.
  7. Carefully remove the skillet from the oven and let it cool for a couple of minutes before slicing. Serve warm, garnished with fresh herbs if desired.
