Ingredients

  • Boneless, skinless chicken breasts
  • Cajun seasoning
  • Orzo pasta
  • Heavy cream
  • Freshly grated Parmesan cheese
  • Chicken broth
  • Bell peppers
  • Spinach
  • Olive oil
  • Minced garlic

Instructions

  1. Start by seasoning your chicken breasts with Cajun seasoning on both sides.
  2. In a large pot or skillet over medium heat, add a splash of olive oil. Once hot, add the seasoned chicken and cook for about 5-6 minutes on each side until golden brown and cooked through. Remove from the pot and set aside.
  3. In the same pot, add a little more oil if needed, then toss in chopped bell peppers. Sauté for 2-3 minutes until they start to soften. Add in minced garlic and cook for an additional minute until fragrant.
  4. Stir in the orzo pasta and coat it with the vegetable mixture.
  5. Add the chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and cover the pot. Cook for about 10-12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
  6. Once the orzo is cooked, stir in the heavy cream and Parmesan cheese. Mix until the cheese has melted and the sauce is creamy. If it’s too thick, you can add a splash more of chicken broth. Season with additional Cajun seasoning to taste.
  7. Slice the cooked chicken and nestle it back into the pot. Add fresh spinach and stir until wilted. Serve hot, garnished with extra Parmesan and a sprinkle of parsley if desired.
