Instructions

  1. In a large mixing bowl, combine 2 cups of all-purpose flour and a pinch of salt. Cut in 100 grams of cold, cubed butter until the mixture resembles coarse crumbs.
  2. Stir in 1/2 cup of non-alcoholic beer and 2 egg yolks, mixing until a dough forms. If the dough feels too sticky, add a little more flour.
  3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  4. While the dough chills, prepare your filling of choice by finely chopping nuts and fruits, mixing with a tablespoon of sugar and a sprinkle of cinnamon for extra flavor.
  5. After chilling, roll out the dough on a lightly floured surface to about 1/8 inch thick. Cut into rectangles or squares as desired.
  6. Place a spoonful of filling in the center of each piece of dough. Be careful not to overfill.
  7. Fold the dough over the filling to create a pocket or roll them up, sealing the edges with a fork or by pinching them closed.
  8. Preheat your oven to 180°C (350°F). Place the rolls on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
  9. Allow the rolls to cool slightly before serving.
