  • 100ml non-alcoholic beer

  • 1 teaspoon cinnamon (or your chosen spices)

Instructions

  1. Prepare the Murbteig: In a large bowl, combine 250g of all-purpose flour, 125g of cold unsalted butter (cut into small cubes), and 50g of powdered sugar. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.
  2. Add Non-alcoholic Beer: Gradually add 100ml of non-alcoholic beer to the flour mixture. Stir gently until the dough just comes together. Avoid overworking the dough to keep it tender.
  3. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This helps to firm up the dough, making it easier to roll out later.
  4. Make the Filling: In a separate bowl, combine 150g of finely chopped nuts, 75g of sugar, and 1 teaspoon of cinnamon (or your chosen spices). Mix well and set aside.
  5. Roll Out the Dough: Once chilled, preheat your oven to 180°C (350°F). On a lightly floured surface, roll out the dough to about 3mm thick. Cut it into rectangles, about 10cm by 5cm.
  6. Fill and Roll: Place a small spoonful of the filling onto one end of each rectangle. Roll the dough tightly around the filling, starting from the filled end. Seal the edges by pressing them together gently.
  7. Prepare for Baking: Place the rollchen seam-side down on a baking sheet lined with parchment paper. Brush the tops with your egg wash (or plant-based alternative) for a shiny finish.
  8. Bake: Bake in the preheated oven for 20-25 minutes, or until golden brown and crisp. Keep an eye on them to prevent over-browning.
  9. Cool and Dust: Once baked, remove the rollchen from the oven and let them cool slightly on a wire rack. When cool, dust with powdered sugar for that sweet finish.
