Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 4 ounces cream cheese
  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together 2 cups of all-purpose flour, 2 tablespoons of cocoa powder, and 1 teaspoon of baking soda. Set this aside.
  3. In a large mixing bowl, beat together ½ cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
  4. Incorporate 1 large egg, 1 teaspoon of vanilla extract, and 1 tablespoon of red food coloring into the butter-sugar mixture. Mix until fully combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until combined. Be careful not to overmix!
  6. Using a tablespoon, scoop the dough and roll it into balls. Place them on the prepared baking sheet, leaving space in between.
  7. Using your thumb or the back of a teaspoon, gently press down in the center of each dough ball to create an indentation.
  8. In a separate bowl, beat together 4 ounces of cream cheese, ½ cup of powdered sugar, and ½ teaspoon of vanilla extract until smooth.
  9. Spoon or pipe the cream cheese mixture into each thumbprint indentation, filling them generously.
  10. Place the cookies in the preheated oven and bake for 12-15 minutes, or until they are set and slightly firm to the touch.
  11. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Keywords: Chill the dough for about 30 minutes if it's too soft to handle. Don't skip the cream cheese filling; consider adding lemon zest for a citrusy twist. Decorate with melted white chocolate for extra sweetness.
