  • 23 cloves fresh garlic
  • 1/4 cup extra virgin olive oil
  • Handful of fresh basil
  • Handful of fresh parsley
  • Juice of half a lemon
  • 1/4 cup pine nuts or walnuts (optional)
  • Salt to taste
  • Freshly cracked black pepper to taste

Instructions

  1. Start by finely chopping about half a cup of sun-dried tomatoes. If they’re not already packed in oil, soak them in warm water for about 10 minutes to soften.
  2. Mince 2 to 3 cloves of fresh garlic. You can adjust the amount depending on how garlicky you want your dip to be.
  3. In a medium bowl, mix the chopped sun-dried tomatoes, minced garlic, and about 1/4 cup of extra virgin olive oil.
  4. Chop a handful of fresh basil and parsley, then stir them into the mixture.
  5. Add the juice of half a lemon, adjusting to taste.
  6. If using, coarsely chop about 1/4 cup of pine nuts or walnuts and fold them into the dip.
  7. Season with salt and freshly cracked black pepper. Taste and adjust seasoning as needed.
  8. Allow the dip to sit for at least 30 minutes to let the flavors meld together.
  9. Transfer the dip to a serving bowl, drizzle with a bit more olive oil if desired, and enjoy it with crusty bread, pita chips, or fresh veggies.
