Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • a pinch of salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup whole milk
  • ½ cup mango puree
  • 1 cup fresh strawberries, diced
  • 1 teaspoon vanilla extract
  • whipped cream or mango-flavored frosting for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
  3. In another bowl, beat the softened unsalted butter until creamy. Gradually add the sugar mixture, beating until light and fluffy.
  4. Mix in the eggs, one at a time, ensuring they are well incorporated. Then, add the milk and mango puree, mixing until smooth.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing!
  6. Gently fold in the diced strawberries, ensuring they’re evenly distributed throughout the batter.
  7. Spoon the batter into the prepared liners, filling each about 2/3 full.
  8. Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove the cupcakes from the oven and allow them to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, top your cupcakes with whipped cream or mango-flavored frosting for an added touch.
