Ingredients

Scale
  • 2 cups cold mashed potatoes
  • 1 cup grated cheese blend (sharp cheddar, mozzarella, and optional Parmesan or Pecorino Romano)
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp finely chopped fresh chives or parsley (optional)
  • Cooking spray or olive oil for baking/air frying

Instructions

  1. Preheat your oven to 400°F (200°C) or your air fryer to 375°F (190°C). Line a large baking sheet with parchment paper and lightly grease it.
  2. In a large mixing bowl, combine the cold mashed potatoes, grated cheese blend, egg, all-purpose flour, baking powder, and seasonings.
  3. Gently mix all the ingredients until just combined, being careful not to overmix. The mixture should be thick and pliable enough to roll into balls.
  4. Use a small cookie scoop to portion out the mixture and roll each portion into a smooth ball. Place them on the prepared baking sheet or in the air fryer basket, leaving space between each one.
  5. For baking, lightly mist the tops with cooking spray and bake for 20-25 minutes until golden brown. For air frying, place in a single layer, mist with cooking spray, and air fry for 12-15 minutes, shaking the basket every 5 minutes.
  6. Once golden and crispy, remove from the oven or air fryer and let cool for a minute before serving.
