  • 1/4 cup brewed coffee (for buttercream)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, cream together 1 cup of unsalted butter and 2 cups of granulated sugar until light and fluffy.
  3. Add 4 large eggs, one at a time, mixing well after each addition. Then, stir in 1 cup of brewed coffee and 1 teaspoon of vanilla extract.
  4. In a separate bowl, whisk together 3 cups of all-purpose flour, 1 cup of cocoa powder, 1 tablespoon of baking powder, and a pinch of salt.
  5. Gradually combine the dry ingredients with the wet mixture, mixing until just combined. Do not overmix.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Once baked, allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  9. In a mixing bowl, beat 1 cup of unsalted butter until creamy.
  10. Gradually add 4 cups of powdered sugar, mixing on low speed until combined.
  11. Add 1/4 cup of brewed coffee and 1/2 cup of caramel sauce, mixing until the buttercream reaches your desired consistency.
  12. Once the cakes are completely cooled, place one layer on a serving plate.
  13. Spread a generous layer of caramel coffee buttercream on top.
  14. Place the second layer on top and frost the top and sides of the cake with the remaining buttercream.
  15. Drizzle additional caramel sauce on top for a beautiful finish.
