Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together olive oil, minced garlic, fresh rosemary, thyme, salt, and pepper.
  3. Rub the mixture all over the chicken, making sure to get under the skin for maximum flavor.
  4. Place sliced lemons and onions inside the cavity of the chicken.
  5. Roast in the oven for about 1.5 hours or until the internal temperature reaches 165°F (74°C).
  6. Let rest for 10-15 minutes before carving.
  7. Cook wild rice according to package instructions and set aside.

  13. Trim and halve Brussels sprouts, then toss with olive oil, salt, and pepper.
  14. Spread on a baking sheet and roast for 20 minutes until crispy.
  15. Drizzle with balsamic glaze and sprinkle with crispy pancetta before serving.

  21. Roll out pie crust on a baking sheet lined with parchment paper.
  22. Slice apples and toss with sugar, cinnamon, and a squeeze of lemon juice.
  23. Arrange apple slices in the center of the crust, leaving a border.
  24. Fold the edges of the crust over the apples, then bake for 30-35 minutes until golden brown.
