  • 1 teaspoon vanilla extract
  • 1 scoop vanilla or chocolate protein powder
  • Optional toppings: mini chocolate chips, crushed nuts, seeds, cinnamon

Instructions

  1. In a mixing bowl, combine 1 cup of Greek yogurt, ½ cup of peanut butter, 2 tablespoons of honey (or maple syrup), 1 teaspoon of vanilla extract, and 1 scoop of protein powder. Stir until all ingredients are well incorporated and smooth.
  2. If the mixture seems too thick, you can add a splash of milk (dairy or non-dairy) until you reach your desired consistency. It should be thick enough to hold its shape but smooth enough to scoop.
  3. Using a tablespoon or small cookie scoop, portion out the mixture onto a parchment-lined baking sheet. Gently flatten each scoop to form bite-sized rounds or squares.
  4. If you’re using toppings like mini chocolate chips or crushed nuts, sprinkle them on top of each bite before they go into the freezer.
  5. Place the baking sheet in the freezer for about 1-2 hours, or until the bites are firm and solid.
  6. Once frozen, transfer the bites into an airtight container or a freezer bag. You can separate layers with parchment paper to prevent sticking.
