Delicious Greek Chicken Gyros

  • 2 lb chicken thighs (fat removed)
  • 1/2 cup greek yogurt (whole fat)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic (minced)
  • 2 tablespoons lemon juice
  • 2 teaspoons red wine vinegar
  • 1 tablespoon oregano
  • 1 teaspoon sea salt
  • pepper (to taste)
  • 1 cucumber (peeled, grated and squeezed (makes about 1/2 cup))
  • 1 1/4 cup greek yogurt (whole fat)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons dill (chopped)
  • 1/2 tablespoon garlic (finely chopped or minced)
  • salt and pepper (to taste)
  • 4 pita bread (or lavash bread wraps)
  • 2 tomatoes (cubed)
  • 1 small red onion (sliced)
  • 1 head lettuce (sliced)
  • 6 oz feta cheese

Instructions

  1. Begin by preparing the chicken marinade. In a large bowl or zip-top bag, combine 1/2 cup Greek yogurt, 2 tablespoons olive oil, 1 tablespoon minced garlic, 2 tablespoons lemon juice, 2 teaspoons red wine vinegar, 1 tablespoon oregano, 1 teaspoon sea salt, and pepper to taste. Mix thoroughly until well combined.
  2. Add the chicken thighs to the marinade and ensure they are completely coated. Seal the bag or cover the bowl, then refrigerate for at least 4 hours, or preferably overnight.
  3. Once marinated, preheat your grill to high heat.
  4. Remove the chicken from the marinade and let any excess drip off. Place the thighs on the grill and cook for about 3-4 minutes per side until the internal temperature reaches 165°F.
  5. After cooking, remove the chicken from the grill and let it rest for 5 minutes. Slice the chicken into strips.
  6. While the chicken is resting, prepare the tzatziki sauce. Grate the cucumber, squeeze out excess moisture, and combine it with 1 1/4 cups Greek yogurt, 1 tablespoon olive oil, 1 tablespoon lemon juice, 2 tablespoons chopped dill, and 1/2 tablespoon finely chopped garlic. Season with salt and pepper to taste.
  7. To assemble the gyros, warm the pita or lavash bread in a skillet for about 30 seconds on each side. Spread tzatziki sauce on the bread, layer on sliced chicken, sliced lettuce, cubed tomatoes, and sliced red onion.
  8. Sprinkle crumbled feta cheese over the top, fold or wrap the pita bread around the filling, and serve immediately.
