- 1/2 cup greek yogurt (whole fat)
- 2 tablespoons olive oil
- 1 tablespoon garlic (minced)
- 2 tablespoons lemon juice
- 2 teaspoons red wine vinegar

- 1 teaspoon sea salt

- 1 cucumber (peeled, grated and squeezed (makes about 1/2 cup))
- 1 1/4 cup greek yogurt (whole fat)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 2 tablespoons dill (chopped)
- 1/2 tablespoon garlic (finely chopped or minced)
- salt and pepper (to taste)
- 4 pita bread (or lavash bread wraps)
- 2 tomatoes (cubed)
- 1 small red onion (sliced)
- 1 head lettuce (sliced)
- 6 oz feta cheese
- Begin by preparing the chicken marinade. In a large bowl or zip-top bag, combine 1/2 cup Greek yogurt, 2 tablespoons olive oil, 1 tablespoon minced garlic, 2 tablespoons lemon juice, 2 teaspoons red wine vinegar, 1 tablespoon oregano, 1 teaspoon sea salt, and pepper to taste. Mix thoroughly until well combined.
- Add the chicken thighs to the marinade and ensure they are completely coated. Seal the bag or cover the bowl, then refrigerate for at least 4 hours, or preferably overnight.
- Once marinated, preheat your grill to high heat.
- Remove the chicken from the marinade and let any excess drip off. Place the thighs on the grill and cook for about 3-4 minutes per side until the internal temperature reaches 165°F.
- After cooking, remove the chicken from the grill and let it rest for 5 minutes. Slice the chicken into strips.
- While the chicken is resting, prepare the tzatziki sauce. Grate the cucumber, squeeze out excess moisture, and combine it with 1 1/4 cups Greek yogurt, 1 tablespoon olive oil, 1 tablespoon lemon juice, 2 tablespoons chopped dill, and 1/2 tablespoon finely chopped garlic. Season with salt and pepper to taste.
- To assemble the gyros, warm the pita or lavash bread in a skillet for about 30 seconds on each side. Spread tzatziki sauce on the bread, layer on sliced chicken, sliced lettuce, cubed tomatoes, and sliced red onion.
- Sprinkle crumbled feta cheese over the top, fold or wrap the pita bread around the filling, and serve immediately.
