  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • ¼ cup non-alcoholic coffee liqueur (optional)
  • 1 cup espresso
  • 2 tablespoons sugar (for coffee dip)
  • powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
  2. In a mixing bowl, whisk together 4 large eggs with ½ cup of sugar until it’s light and fluffy.
  3. Gradually fold in ½ cup of all-purpose flour and a pinch of salt until just combined.
  4. Spread the batter evenly in the prepared pan and bake for about 12-15 minutes, or until a toothpick inserted in the center comes out clean.
  5. Let it cool in the pan for a few minutes, then invert it onto a clean kitchen towel dusted with powdered sugar.
  6. While the cake cools, combine 1 cup of mascarpone cheese, 1 cup of heavy cream, ½ cup of sugar, and 1 teaspoon of vanilla extract in a mixing bowl. Whip until soft peaks form.
  7. Fold in ¼ cup of non-alcoholic coffee liqueur (if using) and set aside.
  8. Brew 1 cup of espresso and let it cool. In a shallow dish, mix the espresso with 2 tablespoons of sugar and an additional splash of non-alcoholic coffee liqueur.
  9. Trim the edges of the cooled cake to make it even. Using the kitchen towel, carefully roll the cake into a log shape, then unroll it gently.
  10. Brush the inside with the coffee dip, then spread a generous layer of the mascarpone filling over it.
  11. Roll the cake back up, this time without the towel. Place the log seam-side down on a serving platter.
  12. Use the remaining mascarpone filling to frost the outside of the log. For added texture, use a fork to create bark-like patterns.
  13. Refrigerate the assembled Yule log cake for at least 4 hours, preferably overnight, to let the flavors meld.
  14. Before serving, dust the top with cocoa powder and decorate with chocolate shavings or fresh berries for a festive touch.
