Festive Sweet Potato Cranberry Gratin Recipe for Holidays

Ingredients

  • Sweet Potatoes
  • Cranberries
  • Heavy Cream
  • Gruyère cheese
  • Unsalted butter
  • Thyme
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice your sweet potatoes into thin, even rounds, about 1/8 inch thick.
  3. If using fresh cranberries, rinse them under cold water and remove any stems. If using dried cranberries, chop them into smaller pieces.
  4. In a bowl, whisk together the heavy cream, salt, pepper, and thyme.
  5. In a greased baking dish, layer half of the sweet potato slices on the bottom. Sprinkle half of the cranberries and half of the cheese over the sweet potatoes. Pour half of the cream mixture over this layer. Repeat the layering process with the remaining ingredients.
  6. Dot the top of the gratin with small pieces of butter or drizzle with olive oil.
  7. Cover the dish with aluminum foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for an additional 20-25 minutes, or until the sweet potatoes are tender and the top is golden brown and bubbly.
  8. Once out of the oven, let your gratin sit for about 10 minutes before serving.
