Ingredients

  • boneless, skinless chicken breasts or thighs
  • cooked rotisserie chicken (optional)
  • frozen peas
  • frozen carrots
  • fresh carrots (optional)
  • green beans (optional)
  • corn (optional)
  • low-sodium chicken broth
  • vegetable broth (optional)
  • Bisquick or similar baking mix
  • whole milk

  • shredded cheddar cheese
  • Monterey Jack cheese (optional)
  • mozzarella cheese (optional)
  • olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add chopped chicken and season with salt and pepper. Cook until the chicken is no longer pink, about 5-7 minutes. Remove from heat and set aside.
  3. In the same skillet, add another splash of olive oil if needed, then toss in your frozen peas and carrots (or fresh veggies). Cook for about 3-4 minutes until they’re heated through. Stir in the cooked chicken.
  4. Pour in the chicken broth and bring it to a gentle simmer. Let it cook for 2-3 minutes, allowing the flavors to meld. Optionally, add a teaspoon of garlic powder or onion powder for extra flavor.
  5. In a mixing bowl, combine the baking mix with milk and shredded cheese. Stir until just combined; don’t overmix!
  6. Transfer the chicken and vegetable mixture into a greased 9×13-inch baking dish. Spoon the cobbler topping evenly over the chicken and vegetables.
  7. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and a toothpick comes out clean.
  8. Once it’s done baking, let it cool for a few minutes before serving.
