  1. Start by finely crushing your Spekulatius cookies in a food processor until they resemble fine crumbs.
  2. In a mixing bowl, combine the crushed cookies, chopped almonds, cream cheese, and your choice of spices. If using non-alcoholic rum flavoring, add it now. Mix until well incorporated.
  3. Use your hands to form small balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
  4. Cover the baking sheet with plastic wrap and refrigerate for at least 30 minutes to firm up the balls.
  5. Melt the dark chocolate in a microwave-safe bowl or using a double boiler until smooth and glossy.
  6. Dip each chilled ball into the melted chocolate, ensuring they are fully coated, and lift them out with a fork to let excess chocolate drip off.
  7. Place the chocolate-coated balls back on the parchment-lined baking sheet and repeat until all are coated.
