Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper to prevent sticking.
  3. In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt. Set aside.
  4. In a large mixing bowl, beat ½ cup of softened unsalted butter with 1 cup of granulated sugar until it’s light and fluffy, about 2-3 minutes.
  5. Mix in 1 large egg and 1 teaspoon of vanilla extract until well combined.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix!
  7. Gently fold in 1 cup of fresh raspberries, taking care not to crush them too much.
  8. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Place the trays in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
