Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or line it with muffin liners.
  3. In a large bowl, combine rolled oats, chia seeds (if using), and a pinch of salt. Stir to mix everything evenly.
  4. In another bowl, whisk together peanut butter, honey or maple syrup, and milk until smooth.
  5. Pour the wet mixture into the dry ingredients and stir until well combined. If adding chocolate chips or dried fruit, fold them in gently.
  6. Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  7. Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
