Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine 1 ½ cups of crushed graham crackers with ½ cup of melted butter and 2 tablespoons of sugar. Mix until well combined. Line a muffin tin with cupcake liners and press the crust mixture firmly into the bottom of each liner.
  3. Bake the crusts in the preheated oven for about 8-10 minutes until set. Remove from the oven and let them cool.
  4. In a large mixing bowl, beat 16 oz of softened cream cheese until smooth. Gradually add ½ cup of granulated sugar and mix until fully combined. Then, add ¼ cup of sour cream, 1 teaspoon of vanilla extract, and a few drops of green food coloring. Mix until the color is evenly distributed.
  5. Spoon the cheesecake mixture into the cooled crusts, filling them about ¾ full. Smooth the tops with a spatula.
  6. Bake the mini cheesecakes for 15-18 minutes, or until the edges are set and the centers still have a slight jiggle. Remove from the oven and let them cool on a wire rack.
  7. Once cooled, refrigerate the cheesecakes for at least 4 hours, preferably overnight, to allow them to set completely.
