  • 1 teaspoon baking soda

  • 1 cup vegetable oil (or melted coconut oil/unsweetened applesauce)
  • 1 cup chopped walnuts (or pecans, optional)
  • 8 oz full-fat cream cheese (or low-fat cream cheese)
  • 1/2 cup unsalted butter (or vegan butter)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or line it with parchment paper.
  2. Peel, core, and chop your apples into small pieces. Set them aside in a bowl and sprinkle a little lemon juice over them.
  3. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
  4. In another bowl, beat together the granulated sugar, brown sugar, and oil until well blended. Add in the eggs one at a time, mixing well after each addition.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
  6. Gently fold the chopped apples and walnuts into the batter until evenly distributed.
  7. Pour the batter into your prepared pan and spread it evenly. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
