Ingredients

Scale
  • 4 medium thinly sliced yellow onions
  • 4 tablespoons unsalted butter
  • 4 cups beef broth
  • Fresh thyme
  • French bread (crusty baguette)
  • Shredded Gruyère cheese

Instructions

  1. In a large skillet, melt 4 tablespoons of butter over medium heat. Add 4 medium thinly sliced yellow onions and a pinch of salt. Cook, stirring frequently, until the onions are golden brown and caramelized, about 30 minutes.
  2. Once the onions are caramelized, pour in 4 cups of beef broth and add a few sprigs of fresh thyme. Bring to a gentle simmer and let it cook for another 15 minutes. Stir occasionally and season with salt and pepper to taste.
  3. While the soup is simmering, preheat your oven to 375°F (190°C). Slice a baguette into 1-inch thick pieces and place them on a baking sheet. Lightly brush each slice with melted butter and toast in the oven for about 10 minutes until golden brown.
  4. For each toasted bread slice, spoon a generous amount of the caramelized onion mixture onto the bread. Top with a handful of shredded Gruyère cheese.
  5. Return the assembled bites to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  6. Remove from the oven and let cool slightly. Garnish with additional fresh thyme if desired. Serve warm and enjoy your delightful French Onion Soup Bites!
