This French Onion Chicken Rice Bake is a delightful fusion of flavors that combines the savory richness of French onion soup with tender chicken and fluffy rice. Perfect for weeknight dinners, this one-pot meal is both comforting and easy to prepare.

Ingredients

  • Boneless, skinless chicken breasts
  • Long-grain white rice
  • Sweet yellow onions
  • Low-sodium beef broth
  • Gruyère cheese
  • Thyme
  • Bay leaves
  • Butter
  • Wine or apple cider vinegar (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the thinly sliced onions and cook, stirring frequently, until they become caramelized and golden brown (about 15-20 minutes).
  3. Once the onions are caramelized, push them to the side of the skillet and add the chicken breasts. Sear each side for about 3-4 minutes until they are lightly browned.
  4. Stir in the uncooked rice, beef broth, thyme, and bay leaves. If you’re using wine or vinegar, add it now. Bring the mixture to a simmer.
  5. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly. Nestle the seared chicken on top of the rice mixture.
  6. Cover the baking dish tightly with aluminum foil and bake for 30 minutes.
  7. After 30 minutes, remove the foil, sprinkle the cheese over the chicken and rice, and bake uncovered for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  8. Once done, let the dish sit for about 5-10 minutes before serving.
