- 3 tablespoons olive oil
- 1 tablespoon lime juice
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1.5 pounds cod fillets
- 1 tablespoon butter (for frying)
- 1/2 cup mayo
- 1/3 cup sour cream
- 2 tablespoons lime juice
- 1 tablespoon sriracha sauce
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/4 teaspoon salt
- 12 corn tortillas
- 2 cups finely shredded cabbage (green or red)
- 1/2 medium red onion (chopped)
- 1 handful fresh cilantro (chopped)
- Lime wedges
- 1/2 cup grated Cotija cheese (optional, to taste)
- 1 jalapeno pepper (chopped finely, optional)
- Prepare the marinade: In a medium bowl, combine 3 tablespoons of olive oil, 1 tablespoon lime juice, 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon garlic powder, and 1/2 teaspoon salt. Stir until well blended. This should take about 1-2 minutes.
- Marinate the fish: Place the 1.5 pounds of cod fillets in a ZipLoc bag and pour the marinade over them. Seal the bag and massage gently to coat the fish evenly. Refrigerate for 30-40 minutes; however, if you're short on time, a minimum of 20 minutes will work.
- Make the sauce: While the fish marinates, combine 1/2 cup mayo, 1/3 cup sour cream, 2 tablespoons lime juice, 1 tablespoon sriracha sauce, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, and 1/4 teaspoon salt in a medium bowl. Mix until smooth and adjust seasoning to taste. Set it aside in the fridge.
- Prep the toppings: Chop 1/2 medium red onion, shred 2 cups of cabbage, and chop a handful of fresh cilantro. If you’re using jalapeno, chop that finely as well. It should take about 5-10 minutes to prepare all the toppings.
- Warm the tortillas: Heat a dry cast iron skillet over medium-high heat. Once hot, warm each of the 12 corn tortillas for about 30 seconds per side, or until they become pliable. Stack them in a clean kitchen towel to keep warm.
- Cook the fish: In the same skillet, melt 1 tablespoon of butter over medium-high heat. Once melted, add the marinated cod fillets. Cook for 3-5 minutes on each side, or until the fish flakes easily with a fork. Avoid overcooking to maintain tenderness.
- Assemble the tacos: Once the fish is cooked, break it into bite-sized pieces. Place the fish on the warmed tortillas and top with shredded cabbage, chopped onion, cilantro, and any additional toppings you desire. Drizzle with the prepared sauce.
- Serve: Serve the tacos immediately with lime wedges on the side for an extra burst of freshness. Enjoy your homemade fish tacos!

Keywords: Allowing the fish to marinate for at least 30 minutes ensures the flavors penetrate deeply. Use a hot skillet for a nice sear on the fish. Fresh toppings like cilantro and lime add brightness and texture.
