Ingredients

Scale
  • 2 cups fresh or thawed blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • Pie crust (store-bought or homemade)
  • Unsalted butter (for brushing)
  • Egg wash (1 egg, beaten) or almond/coconut milk for vegan option

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, combine 2 cups of fresh or thawed blueberries, 1/4 cup granulated sugar, 1 tablespoon cornstarch, and 1 teaspoon cinnamon. Stir gently to coat the blueberries without crushing them. Set aside to let the mixture sit for about 10 minutes.
  3. If using homemade pie crust, roll it out on a lightly floured surface to about 1/8-inch thickness. If using store-bought, simply unroll it on a flat surface.
  4. Using a round cookie cutter or a glass, cut out circles of dough about 4 inches in diameter. You should get about 12 circles from one crust.
  5. Place a tablespoon of the blueberry mixture in the center of each dough circle. Be careful not to overfill, as they might burst during baking.
  6. Fold the dough over the filling to create a half-moon shape or gather the edges together to form a pouch. Pinch the seams tightly to seal well.
  7. Place the filled bombs on the prepared baking sheet and brush the tops with an egg wash or your chosen alternative.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown. Keep an eye on them to prevent over-baking.
  9. Once baked, allow the Blueberry Pie Bombs to cool on a wire rack for about 10 minutes. Serve warm, and enjoy the burst of blueberry goodness!

Keywords: Experiment with flavors by adding lemon juice or zest to the blueberry filling. Don't overfill the bombs to avoid mess, and chill the dough if it becomes too warm while working with it.
