Ingredients

Scale
  • 8 oz Cream Cheese, softened
  • 1/2 cup Powdered Sugar
  • 2 tablespoons Baileys Extract
  • 1 cup Graham Cracker Crumbs
  • Chocolate Coating (milk, dark, or white chocolate)

Instructions

  1. In a large mixing bowl, combine 8 oz of softened cream cheese, 1/2 cup of powdered sugar, and 2 tablespoons of Baileys Extract. Use a hand mixer or a whisk to blend these ingredients until smooth and creamy.
  2. Gradually fold in 1 cup of graham cracker crumbs until well incorporated. The mixture should be thick enough to form balls.
  3. Cover the bowl with plastic wrap and refrigerate for about 30 minutes. This makes it easier to roll the mixture into balls.
  4. Once chilled, use a small cookie scoop or your hands to form bite-sized balls (about 1 inch in diameter). Place them on a parchment-lined baking sheet.
  5. Freeze the balls for about 15-20 minutes to firm them up, which will help during the coating process.
  6. While the cheesecake balls are in the freezer, melt your choice of chocolate in a microwave-safe bowl. Heat in 30-second intervals, stirring in between until fully melted and smooth.
  7. Remove the balls from the freezer and dip each one into the melted chocolate, using a fork to coat them evenly. Gently shake off any excess chocolate and place them back on the parchment-lined sheet.
  8. Let the chocolate coating set in the refrigerator for about 30 minutes. If desired, you can drizzle additional melted chocolate on top for a decorative touch.
