Ingredients

  • Fresh medium-sized carrots
  • Firm bright green brussel sprouts
  • Real maple syrup
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Fresh thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots. Cut them into even-sized sticks, about 1-2 inches long. Trim the ends of the brussel sprouts and slice them in half.
  3. In a small bowl, combine maple syrup, olive oil, garlic powder, salt, pepper, and thyme. Whisk until well blended.
  4. In a large bowl, add the carrots and brussel sprouts. Pour the maple glaze over them and toss until everything is evenly coated.
  5. Spread the glazed vegetables on a baking sheet in a single layer. Ensure they are not overcrowded to achieve maximum crispiness.
  6. Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Halfway through, give them a good toss to ensure they brown evenly.
  7. The vegetables should be tender and caramelized. If you want extra crispiness, you can broil them for an additional 2-3 minutes at the end.
  8. Once done, remove from the oven, let cool slightly, and serve warm.
