Best Crispy Dill Pickle Parmesan Chicken: Ultimate Flavor Explosion!

This dish combines the crunch of Parmesan with the tanginess of dill pickles, creating a delightful twist on a classic chicken dinner. Perfect for impressing guests or enjoying a family meal, this recipe is quick and easy to prepare.

Ingredients

  • Boneless, skinless chicken breasts
  • Whole dill pickles or pickle slices
  • Freshly grated parmesan cheese
  • Panko breadcrumbs
  • Eggs or milk and cornstarch mixture
  • Garlic powder
  • Onion powder
  • Black pepper
  • Cayenne (optional)
  • Italian herbs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Pat the chicken breasts dry with paper towels. If they are thick, consider butterflying them or pounding them to an even thickness for quicker cooking.
  3. Place the chicken in a bowl and cover it with dill pickle juice. Let it marinate for at least 30 minutes.
  4. In one bowl, whisk together the eggs (or milk mixture). In a second bowl, mix the breadcrumbs, grated parmesan, garlic powder, onion powder, and black pepper.
  5. Remove the chicken from the pickle juice and let the excess drip off. Dip each piece into the egg mixture, then coat it thoroughly in the breadcrumb mixture.
  6. Place the coated chicken breasts onto the prepared baking sheet, ensuring they’re not touching.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is golden brown and cooked through.
  8. Let the chicken rest for a few minutes before slicing. Serve with extra dill pickles on the side and your favorite dipping sauce.
