Ingredients

  • Bone-in, skin-on chicken thighs (or drumsticks or chicken breasts)
  • Panko breadcrumbs (or regular breadcrumbs)
  • Hot honey (or honey mixed with hot sauce)
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Salt
  • Pepper
  • Flour (all-purpose or gluten-free flour)
  • Eggs (or flax egg: 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat your chicken pieces dry with paper towels.
  3. In three separate bowls, place flour mixed with salt and pepper, beaten eggs, and panko breadcrumbs combined with your desired spices.
  4. Coat each piece of chicken in the flour mixture, shaking off any excess. Dip it into the beaten eggs, letting the excess drip off. Roll it in the panko breadcrumbs until well-coated.
  5. Place the coated chicken pieces on a greased baking sheet, leaving space between them for even cooking.
  6. Bake in the preheated oven for about 35-40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the coating is golden brown and crispy.
  7. In the last 5-10 minutes of baking, drizzle the hot honey over the chicken.
  8. Once cooked, remove the chicken from the oven and let it rest for a few minutes. Serve with extra hot honey drizzled on top.
