  • Fettuccine or penne pasta
  • Fresh Roma tomatoes or canned crushed tomatoes
  • Fresh garlic cloves
  • Heavy cream or half-and-half or coconut milk
  • Freshly grated Parmesan cheese or nutritional yeast
  • Fresh basil or dried basil
  • Extra virgin olive oil or any neutral oil
  • Salt and pepper to taste

Instructions

  1. Start by bringing a large pot of salted water to a rolling boil. Add your pasta and cook until al dente as per package instructions. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat a couple of tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn it!
  3. If using fresh tomatoes, chop them and add to the skillet. If using canned, pour them in straight from the can. Cook for about 5-7 minutes until the tomatoes break down and become saucy.
  4. Lower the heat, and stir in the heavy cream. Mix well and let it simmer for another 3-4 minutes until the sauce thickens slightly.
  5. Add the cooked pasta to the skillet. Toss well to ensure every piece is coated in the creamy tomato sauce. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.
  6. Stir in the grated Parmesan cheese, and season with salt and pepper to taste. If you're using fresh basil, chop it up and mix it in now too.
  7. Plate your creamy tomato garlic pasta, garnishing with additional cheese and basil if desired. Enjoy your delicious creation!
