Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon Italian seasoning
  • 1 tablespoon olive oil or butter
  • 2 cloves fresh minced garlic
  • 1 cup chicken broth (or vegetable broth for vegetarian)
  • 1 cup heavy cream (or half-and-half or a combination of milk and Greek yogurt)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup fresh spinach (optional)
  • Red pepper flakes (optional, to taste)
  • Fresh herbs like basil or thyme (optional, to taste)

Instructions

  1. Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
  2. In a large skillet over medium-high heat, add olive oil or butter. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, reduce the heat to medium and add more olive oil or butter if needed. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth and bring it to a simmer, scraping up any brown bits from the bottom of the pan. Then, stir in the heavy cream and let it simmer for another 2-3 minutes.
  5. Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add more chicken broth or cream to reach your desired consistency.
  6. Stir in the fresh spinach and let it wilt in the sauce for about a minute.
  7. Place the seared chicken breasts back into the skillet, spooning the creamy sauce over them. Allow everything to cook together for an additional 2-3 minutes.
  8. Serve the Creamy Garlic Parmesan Chicken Breast hot, garnished with extra Parmesan and fresh herbs if desired.
