Instructions

  1. In a small saucepan, combine the fresh cranberries, sugar, thyme leaves, and water. Cook over medium heat, stirring occasionally, until the cranberries start to burst and the mixture thickens, about 10 minutes. Once ready, remove from heat and set aside to cool slightly.
  2. Preheat your oven to 375°F (190°C). While the oven heats, carefully unroll the phyllo dough and lay it flat. Cut it into squares that will fit into your muffin tin. You'll want several layers for each cup, so stack 3-4 squares on top of each other, brushing melted butter between each layer to ensure they stick and become crispy.
