Instructions

  1. First things first, take the boneless, skinless chicken breasts or thighs and cut them into even, bite-sized pieces – aiming for about 1-inch cubes. Pat them thoroughly dry with paper towels and season generously with salt and freshly ground black pepper.
  2. Heat a large, heavy-bottomed skillet over medium-high heat. Add a tablespoon of olive oil or a knob of butter. Once shimmering, add the seasoned chicken bites to the hot skillet in a single layer. Let them cook undisturbed for 3-4 minutes per side, until they're beautifully golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  3. In the same skillet, reduce the heat to medium-low. Add the unsalted butter and let it melt. Once melted, toss in the minced garlic and let it cook for about 1 minute until fragrant.
