  • 2 large eggs
  • 1/2 cup maple syrup or honey
  • 1 cup rolled oats

  • 1/2 cup chocolate protein powder
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
  2. In a blender or food processor, combine 1 cup of cottage cheese, 2 large eggs, and 1/2 cup of maple syrup or honey. Blend until smooth and creamy.
  3. In a mixing bowl, whisk together 1 cup of oats, 1/2 cup of cocoa powder, 1/2 cup of chocolate protein powder, and 1 teaspoon of baking powder.
  4. Pour the blended cottage cheese mixture into the dry ingredients. Stir until just combined. Be careful not to overmix!
  5. Transfer the brownie batter into your prepared baking pan, spreading it evenly with a spatula.
  6. Place the pan in the oven and bake for about 25-30 minutes. You’ll know they’re done when a toothpick inserted in the center comes out with a few moist crumbs.
  7. Once baked, remove the brownies from the oven and let them cool in the pan for about 10-15 minutes. Then, lift them out using the parchment paper and let them cool completely on a wire rack before slicing into squares.
