- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup maple syrup or honey
- 1 cup rolled oats
- 1/2 cup unsweetened cocoa powder
- 1/2 cup chocolate protein powder
- 1 teaspoon baking powder
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
- In a blender or food processor, combine 1 cup of cottage cheese, 2 large eggs, and 1/2 cup of maple syrup or honey. Blend until smooth and creamy.
- In a mixing bowl, whisk together 1 cup of oats, 1/2 cup of cocoa powder, 1/2 cup of chocolate protein powder, and 1 teaspoon of baking powder.
- Pour the blended cottage cheese mixture into the dry ingredients. Stir until just combined. Be careful not to overmix!
- Transfer the brownie batter into your prepared baking pan, spreading it evenly with a spatula.
- Place the pan in the oven and bake for about 25-30 minutes. You’ll know they’re done when a toothpick inserted in the center comes out with a few moist crumbs.
- Once baked, remove the brownies from the oven and let them cool in the pan for about 10-15 minutes. Then, lift them out using the parchment paper and let them cool completely on a wire rack before slicing into squares.
