  • 2 cups shredded rotisserie chicken or cooked chicken breast, thinly sliced or diced
  • 1 ripe avocado
  • 4 large (10-inch) flour tortillas or whole wheat tortillas
  • 1 cup romaine lettuce or baby spinach or spring mix
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup shredded cheese (Monterey Jack, cheddar, or provolone)
  • 1/4 cup creamy dressing (light ranch, cilantro-lime dressing, or mayonnaise mixed with lemon)
  • Optional: hot sauce, red pepper flakes, fresh herbs (cilantro, dill, chives), toasted nuts, or dried cranberries

Instructions

  1. Prepare Your Chicken: If using freshly cooked chicken, make sure it’s cooled and either shredded, diced, or thinly sliced. If using rotisserie chicken, simply shred it.
  2. Prepare Your Avocado: Cut the avocado in half, remove the pit, and scoop out the flesh. You can either slice it thinly, dice it, or gently mash it with a fork. If mashing, add a tiny squeeze of lime juice to help prevent browning.
  3. Chop Your Veggies & Cheese: Wash and chop any additional vegetables you plan to include, such as lettuce, tomatoes, cucumbers, or red onion. If using shredded cheese, have it ready.
  4. Warm Your Tortilla (Optional but Recommended): Lightly warm your tortilla in a dry skillet over medium heat for 15-30 seconds per side, or microwave for about 15 seconds.
  5. Assemble the Wrap: Lay your warmed tortilla flat on a clean surface or cutting board.
  6. Add Your Spread: Spread your chosen dressing or sauce evenly over the entire surface of the tortilla, leaving about a half-inch border around the edges.
  7. Layer the Fillings: Start by layering a handful of your fresh greens down the center of the tortilla, followed by the prepared chicken, avocado slices or cubes, additional vegetables, and finally the shredded cheese.
  8. Fold and Roll: Fold the left and right sides of the tortilla in towards the center, then starting from the bottom, tightly roll the tortilla upwards and away from you.
  9. Serve: Once rolled, slice the wrap in half diagonally for easier eating and enjoy immediately.
