Chewy White Chocolate Peppermint Cookies for Holidays!

  • 1 cup Unsalted Butter, at room temperature
  • 1 cup Granulated Sugar
  • 1 cup Light Brown Sugar
  • 2 large Eggs, at room temperature
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Peppermint Extract
  • 3 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 cups White Chocolate Chips or Chunks
  • 1 cup Crushed Peppermint Candies (Candy Canes)

Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, cream together the room temperature unsalted butter, granulated sugar, and light brown sugar on medium speed until light, fluffy, and pale in color, about 2-3 minutes.
  3. Beat in the room temperature eggs one at a time, mixing well after each addition. Stir in the vanilla extract and peppermint extract until just combined.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. With the mixer on low speed, gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  6. Gently fold in the white chocolate chips (or chunks) and about half of the crushed peppermint candies using a spatula.
  7. Drop rounded tablespoons of cookie dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake in the preheated oven for 9-11 minutes, or until the edges are set and lightly golden, but the centers still look soft.
  9. Remove the baking sheets from the oven and let the cookies cool on the sheets for about 5 minutes before transferring them to a wire rack to cool completely.
