Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Hot honey
  • Chili powder
  • Cumin
  • Garlic powder
  • Onion powder
  • Salt
  • Black pepper
  • Fresh lime juice
  • Large flour tortillas (10-12 inch)
  • Cheese blend (Monterey Jack, sharp cheddar, Oaxaca, mozzarella)
  • Neutral oil (canola, vegetable, or avocado oil)
  • Fresh jalapenos
  • Sour cream (or Greek yogurt or mayonnaise)
  • Fresh garlic cloves
  • Fresh cilantro
  • Salt (for the sauce)
  • Lime juice (for the sauce)

Instructions

  1. Season the Chicken: If using chicken breasts or thighs, pat them dry and dice them into 1/2-inch pieces. In a bowl, toss the chicken with chili powder, cumin, garlic powder, onion powder, a pinch of salt, and black pepper until evenly coated.
  2. Cook the Chicken: Heat a tablespoon of olive oil or your preferred cooking oil in a large skillet over medium-high heat. Add the seasoned chicken and cook, stirring occasionally, until it's golden brown and cooked through, about 5-7 minutes.
  3. Make it Hot Honey: Once the chicken is fully cooked, reduce the heat to low. Pour in your hot honey (store-bought or homemade) and a squeeze of fresh lime juice. Toss gently until all the chicken pieces are beautifully coated and glazed. Remove from heat and set aside.
  4. Prep Ingredients: While the chicken cooks, prepare your sauce ingredients. Roughly chop the jalapenos (remember to deseed for less heat!), mince the garlic, and roughly chop the cilantro.
  5. Blend: In a food processor or a high-speed blender, combine the sour cream (or Greek yogurt/mayo), chopped jalapenos, minced garlic, fresh cilantro, a generous squeeze of lime juice, and a pinch of salt.
  6. Process Until Smooth: Blend until the sauce is completely smooth and creamy. Taste and adjust seasoning if necessary – you might want more lime, salt, or even another sliver of jalapeno for extra heat. Transfer to a small serving bowl and refrigerate until ready to serve.
  7. Prep Your Station: Have your tortillas, hot honey chicken, and shredded cheese blend ready.
  8. Heat Your Pan: Heat a large non-stick skillet or griddle over medium heat. Lightly brush or spray the pan with a little oil.
  9. Build a Quesadilla: Lay one flour tortilla flat in the warm pan. Sprinkle an even layer of your shredded cheese over one half of the tortilla.
  10. Add the Chicken: Spoon about 1/2 cup of the hot honey chicken mixture evenly over the cheese-covered half.
  11. More Cheese!: Sprinkle a little more cheese over the chicken filling. This acts as a delicious 'glue' to hold everything together.
  12. Fold and Cook: Carefully fold the empty half of the tortilla over the filling. Cook for 3-5 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is completely melted and gooey. You might need to gently press down on the quesadilla with a spatula to ensure even contact with the pan.
  13. Repeat: Remove the cooked quesadilla from the pan, and repeat the process with the remaining tortillas, chicken, and cheese, adding more oil to the pan as needed.
  14. Serve and Enjoy: Once your Cheesy Hot Honey Chicken Quesadillas are cooked, let them rest on a cutting board for a minute or two. Slice each quesadilla into wedges and serve immediately with that incredible Spicy Jalapeno Cream Sauce on the side for dipping.

Keywords: Don't overstuff the quesadillas for easier folding and cooking. Cooking on medium heat ensures the cheese melts thoroughly without burning the tortilla. Shred your own cheese for better melt quality.
