Ingredients

Scale
  • 1 to 1.5 pounds tender cut of beef (sirloin, ribeye, or beef tenderloin)
  • High smoke point oil (olive oil, avocado oil, or grapeseed oil)
  • 46 cloves fresh garlic, minced (for the steak)
  • Unsalted butter
  • Salt and freshly ground black pepper
  • Fresh parsley (optional)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 12 tablespoons unsalted butter (for the sauce)
  • 23 cloves fresh garlic, minced (for the sauce)
  • 1 teaspoon cornstarch (optional)
  • 1 tablespoon cold water (optional)
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Take your chosen beef cut out of the refrigerator about 20-30 minutes before cooking. This helps it cook more evenly.
  2. Pat the steak very dry with paper towels. This is a crucial step for achieving a good sear!
  3. Cut the steak into 1-inch to 1.5-inch bite-sized cubes.
  4. Season the steak bites generously all over with salt and freshly ground black pepper.
  5. Heat a large, heavy-bottomed skillet over medium-high heat until it's smoking slightly.
  6. Add 1 tablespoon of high smoke point oil to the hot skillet.
  7. Working in batches if necessary, add the seasoned steak bites in a single layer.
  8. Sear for 1-2 minutes per side until a beautiful brown crust forms and the steak is cooked to your desired doneness.
  9. Once seared, remove the steak bites from the pan and set them aside on a plate.
  10. Reduce the heat to medium. Add 2 tablespoons of butter to the same skillet, letting it melt.
  11. Add the minced garlic (4-6 cloves) to the melted butter and sauté for about 30 seconds until fragrant.
  12. Return the seared steak bites to the pan with the garlic butter. Toss them gently to coat evenly.
  13. Remove the steak bites from the skillet and transfer them to a clean plate or serving dish. Loosely tent with foil to keep warm.
  14. In a separate medium saucepan, melt 1 tablespoon of butter over medium heat.
  15. Add the minced garlic (2-3 cloves) and sauté for about 30 seconds until fragrant.
  16. Pour in the heavy cream and bring it to a gentle simmer, stirring occasionally.
  17. Reduce the heat to low. Gradually whisk in the freshly grated Parmesan cheese until it’s fully melted and the sauce is smooth.
  18. If desired, whisk in the cornstarch slurry and simmer for another minute until the sauce thickens.
  19. Season the sauce with salt and freshly ground black pepper to taste.
  20. Arrange the tender garlic butter steak bites on your serving plates.
  21. Spoon the rich, creamy Parmesan sauce generously over the steak bites, or serve the sauce on the side for dipping.
  22. Garnish with fresh chopped parsley, if using. Serve immediately.
