These Breakfast Pancake Poppers are the perfect bite-sized treats that combine fluffy pancake goodness with convenience. Ideal for busy mornings or a fun family brunch, they are sure to become your new breakfast obsession!

  • 1 1/2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 2 tablespoons Granulated Sugar
  • 1/2 teaspoon Salt
  • 1 cup Milk
  • 1 Large Egg
  • 2 tablespoons Melted Unsalted Butter
  • 1 teaspoon Vanilla Extract
  • Optional Mix-ins: Fresh or Frozen Berries, Mini Chocolate Chips, Cooked Beef Crumbles, Chopped Nuts, Citrus Zest
  • For Serving: Maple syrup, Powdered sugar, Fruit compote, Whipped cream

Instructions

  1. In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt.
  2. In a separate medium bowl, whisk together the milk, large egg, melted unsalted butter, and vanilla extract until well combined and smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or spatula until just combined, leaving a few small lumps.
  4. If adding any optional mix-ins like berries, chocolate chips, or cooked beef crumbles, gently fold them into the batter.
  5. Place your aebleskiver pan over medium heat. Once hot, lightly brush each well with melted butter or cooking spray.
  6. Carefully fill each well about two-thirds full with batter.
  7. Cook the poppers for 2-3 minutes, or until small bubbles appear on the surface and the edges look set and slightly golden.
  8. Using a wooden skewer or small offset spatula, carefully flip each popper so the uncooked side faces down.
  9. Continue cooking for another 2-3 minutes, or until golden brown on all sides and cooked through.
  10. Transfer the cooked poppers to a serving plate and repeat the process with the remaining batter. Serve warm with your favorite toppings!
