- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1–2 tablespoons sriracha
- 1 cup panko breadcrumbs
- Pinch of paprika
- Garlic powder
- Oil for frying
- Corn tortillas
- Shredded green cabbage
- Sliced avocado
- Fresh lime juice
- Start by rinsing and patting dry 1 pound of medium shrimp. In a bowl, toss the shrimp with salt and pepper to season.
- In a separate bowl, mix together 1/2 cup mayonnaise, 1/4 cup sweet chili sauce, and 1-2 tablespoons of sriracha (adjust to taste for spice). Set this aside.
- In another bowl, prepare a breading station. Mix 1 cup of panko breadcrumbs with a pinch of paprika and garlic powder. Dip each shrimp in the Bang Bang sauce, then coat in the breadcrumbs.
- Heat about 1/2 inch of oil in a skillet over medium-high heat. Once hot, carefully add the breaded shrimp, cooking in batches for about 2-3 minutes on each side until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate.
- While the shrimp are frying, warm your tortillas in a dry skillet or microwave until pliable.
- Start with a warm tortilla, add a handful of shredded cabbage, a few crispy shrimp, a drizzle of the Bang Bang sauce, and top it off with sliced avocado and a squeeze of lime.
