Instructions

  1. Start by juicing one large lemon to get about 3 tablespoons of fresh lemon juice. Mince 1-2 cloves of garlic, depending on how garlicky you like it.
  2. In a medium bowl, whisk together the lemon juice, minced garlic, 1 tablespoon of Dijon mustard, and 1 tablespoon of honey (or maple syrup).
  3. Gradually add ½ cup of extra virgin olive oil while whisking continuously to emulsify the mixture, creating a smooth and creamy vinaigrette.
  4. Season the vinaigrette with salt and freshly cracked black pepper to taste. Start with about ½ teaspoon of salt and a few cracks of pepper, then adjust as needed.
