  • 1 tablespoon breadcrumbs (optional)
  • 1 beaten egg (optional)
  • 2 ears fresh corn on the cob (or 2 cups frozen corn, thawed, or canned corn, drained and rinsed)
  • 1/2 cup finely diced red onion
  • 1/2 cup finely diced red or orange bell pepper
  • 1/4 cup chopped cilantro
  • 1 jalapeño, finely diced (seeds and membranes removed for less spice)
  • Juice of 1 lime
  • 1 can black beans, drained and rinsed (optional)
  • 4 cups crisp romaine lettuce or mixed greens
  • 1 avocado, sliced or diced
  • 1 cup shredded cheese (Monterey Jack, cheddar, or Mexican blend)
  • 1/2 cup sour cream or plain Greek yogurt
  • Crispy tortilla strips or pickled red onions (optional toppings)

Instructions

  1. If using fresh corn, cook it (grill or boil) until tender, then carefully cut the kernels from the cob. If using frozen, thaw it. If canned, drain and rinse thoroughly.
  2. In a medium bowl, combine the corn kernels with the finely diced red onion, bell pepper, cilantro, and jalapeño (if using).
  3. Pour in the fresh lime juice and season with a pinch of salt and pepper. Toss gently to combine.
  4. Cover the bowl and refrigerate for at least 15-20 minutes while you prepare the burgers.
  5. In a large bowl, combine the ground beef with the chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. If using, add breadcrumbs or a beaten egg here.
  6. Gently mix the ingredients with your hands until just combined. Be careful not to overmix.
  7. Divide the mixture into four equal portions and gently form them into patties, about 3/4-inch thick.
  8. Heat a large skillet or grill pan over medium-high heat. Add a tablespoon of olive oil if your pan isn't non-stick.
  9. Once the pan is hot, carefully place the burger patties in the skillet. Cook for 4-5 minutes per side for medium doneness.
  10. Once cooked, remove the patties from the skillet and let them rest on a plate for a few minutes.

  12. Place one cooked beef burger patty on top of the greens in each bowl.
  13. Spoon a generous amount of the prepared corn salsa over and around each burger patty.
