Instructions

  1. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon. Whisk until well blended.
  2. In a separate bowl, crack the eggs and whisk lightly. Add the whole milk and vanilla extract, whisking until fully combined.
  3. Pour the melted butter into the wet mixture and whisk until incorporated.
  4. Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold together until just combined; a few lumps are fine.
  5. Cover the bowl with plastic wrap or a kitchen towel and let the dough rest for about 30 minutes.
  6. Choose a large, deep pot or deep fryer and fill it with vegetable oil to a depth of about 2-3 inches.
  7. Heat the oil over medium heat until it reaches 350Β°F (175Β°C). Use a candy thermometer or drop a small piece of dough into the oil to check readiness.
  8. Prepare a plate lined with paper towels for draining the beignets.
  9. Turn the rested dough onto a lightly floured surface and roll it out to about 1/2 inch thick.
  10. Cut the dough into squares or rectangles, about 2-3 inches in size.
  11. Carefully drop a few pieces of dough into the hot oil, avoiding overcrowding.
  12. Fry for about 2-3 minutes on each side, or until golden brown, flipping halfway through with a slotted spoon.
  13. Remove the beignets from the oil and place them on the prepared plate to drain excess oil.
  14. Repeat with the remaining dough, ensuring the oil temperature remains consistent.
  15. Once all beignets are fried, dust them generously with powdered sugar before serving.
