Ingredients

Scale
  • 4 bone-in pork chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • 1 tablespoon brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried thyme, salt, black pepper, cayenne pepper (if using), and brown sugar. Mix well until evenly distributed.
  2. In a separate small bowl, whisk together Dijon mustard, apple cider vinegar, and Worcestershire sauce until smooth.
  3. Pour the mustard mixture into the spice mixture and stir until you have a thick marinade.
  4. Place pork chops in a large resealable plastic bag or shallow dish. Pour the marinade over the pork chops, ensuring they are well coated. Seal the bag tightly or cover the dish with plastic wrap.
  5. Refrigerate for at least 1 hour, preferably 4 to 6 hours or overnight for best results.
  6. About 30 minutes before cooking, remove pork chops from the refrigerator and let them sit at room temperature. Preheat your grill or skillet over medium-high heat.
  7. Remove pork chops from the marinade, allowing excess to drip off. Discard the leftover marinade. Place pork chops on the grill or skillet and cook for about 4-5 minutes on one side without moving them.
  8. Flip the pork chops and cook for another 4-5 minutes on the other side until the internal temperature reaches 145°F (63°C).
  9. For a more caramelized exterior, cook for an additional minute or two on each side, being careful not to overcook.
  10. Once cooked, remove pork chops from the grill or skillet and transfer to a plate. Cover loosely with aluminum foil and let rest for 5-10 minutes.
  11. Garnish with freshly chopped parsley and serve with your favorite sides, such as mashed potatoes, grilled vegetables, or a fresh salad. Drizzle with olive oil or a squeeze of lemon juice for added flavor.
