Instructions

  1. Prepare the Watermelon: Start by cutting your watermelon. First, slice it in half, then into thick rounds. Remove the rind, and then cut the watermelon flesh into bite-sized cubes, about 1-inch pieces. Place the cubes in a large mixing bowl.
  2. Prepare the Peaches: Wash your peaches thoroughly. If you prefer to remove the skin, you can blanch them briefly in boiling water, then transfer to an ice bath, and the skin should peel off easily. However, for a rustic salad, I often leave the skin on. Halve each peach, remove the pit, and then cut the peach halves into similar bite-sized cubes as the watermelon. Add them to the mixing bowl with the watermelon.
  3. Crumble the Feta: If you're using a block of feta, crumble it directly over the fruit in the bowl. If you have pre-crumbled feta, simply add it in.
  4. Chop the Mint: Wash and pat dry your fresh mint leaves. Roughly chop them or tear them by hand. The goal is to release their beautiful aroma. Sprinkle the mint over the fruit and feta.
  5. Dress the Salad: Squeeze the fresh lime juice directly over all the ingredients in the bowl. If your fruit isn't as sweet as you’d like, or if you simply prefer a touch more sweetness, drizzle a little honey or agave nectar over the salad at this stage.
  6. Toss and Serve: Gently toss all the ingredients together until everything is well combined and coated with the lime juice. Be careful not to over-mix, especially with the delicate peaches. Give it a taste and adjust any seasonings if needed – perhaps a tiny pinch of salt to further enhance the flavors, or more lime juice. Serve immediately for the best flavor and texture!
