Spicy Jalapeno Raspberry Chicken for Flavorful Dinner Delight

Jalapeno Raspberry Chicken is a vibrant and bold dish that combines the heat of fresh jalapenos with the sweet tang of ripe raspberries. This unique combination elevates chicken into a culinary masterpiece that is quick to prepare and absolutely delicious.

Ingredients

  • Boneless, skinless chicken breasts
  • Fresh raspberries
  • Fresh jalapenos
  • Honey
  • Fresh minced garlic
  • Olive oil
  • Chicken broth

Instructions

  1. Prepare the marinade: In a bowl, combine 1 cup of fresh raspberries, 1 to 2 finely chopped jalapenos (depending on your heat preference), 2 tablespoons of honey, 2 minced garlic cloves, and ½ cup of chicken broth. Mash the raspberries slightly to release their juices and mix everything thoroughly.
  2. Marinate the chicken: Place your chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
  3. Preheat your oven: While the chicken is marinating, preheat your oven to 375°F (190°C).
  4. Sear the chicken: Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Once hot, remove the chicken from the marinade (reserve the marinade) and sear the chicken for about 3-4 minutes on each side until golden brown.
  5. Bake the chicken: After searing, pour the reserved marinade over the chicken in the skillet. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
  6. Rest and serve: Once cooked, remove the skillet from the oven, let the chicken rest for about 5 minutes, then slice and serve it drizzled with the sauce from the skillet. Garnish with additional fresh raspberries or sliced jalapenos if desired.
