Instructions

  1. Start by shucking the corn, removing all the silk and husks. Rinse the cobs under cold water and pat them dry.
  2. You can choose to boil or grill the corn. To boil, fill a large pot with salted water, bring it to a boil, and add the corn. Cook for about 5-7 minutes until tender. If grilling, preheat the grill to medium-high and place the corn directly on the grill grates, turning occasionally for about 10-15 minutes.
  3. While the corn cooks, in a bowl, mix together softened cream cheese, melted butter, Cajun seasoning, and lime juice until smooth. Adjust seasoning to taste.
  4. Once the corn is cooked, remove it from the heat. While it’s still warm, generously coat each cob with the creamy Cajun mixture using a brush or your hands.
  5. Sprinkle freshly chopped cilantro and grated Parmesan cheese over the coated corn. For an extra zesty finish, squeeze a bit more lime juice on top.
