  • 1 cup panko breadcrumbs
  • 1/2 cup sesame seeds (white and/or black)
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil (for frying)
  • 1/4 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon lime juice
  • 1/2 teaspoon garlic powder
  • Green onions, finely sliced
  • Sesame seeds (optional)

Instructions

  1. Begin by preparing your salmon. Cut the fresh salmon fillet into bite-sized cubes, about 1 inch each.
  2. In a shallow dish, combine the panko breadcrumbs, sesame seeds, garlic powder, onion powder, salt, and black pepper. Mix well until everything is evenly distributed.
  3. In another bowl, whisk the two eggs until they are well beaten.
  4. Take a piece of salmon, dip it into the all-purpose flour first, shaking off any excess. Then, dip it into the beaten eggs, allowing the excess egg to drip off, followed by coating it generously with the panko-sesame mixture.
  5. Repeat this process for all salmon pieces, placing them on a plate as you go.
  6. Heat a large skillet over medium-high heat and add the vegetable oil. To check if the oil is hot enough, sprinkle a few breadcrumbs into the pan; they should sizzle immediately.
  7. Once the oil is ready, carefully place the breaded salmon bites into the skillet in a single layer. Cook for about 3-4 minutes on one side until golden brown, then gently flip each piece and cook for another 3-4 minutes until the other side is also golden and the salmon is cooked through.
  8. Once cooked, transfer the salmon bites onto a plate lined with paper towels to absorb any excess oil.
  9. While the salmon bites are cooling, prepare the Bang Bang sauce by mixing together mayonnaise, sweet chili sauce, sriracha, lime juice, and garlic powder in a small bowl. Taste and adjust seasoning as needed.
  10. Finally, plate your sesame crusted salmon bites and drizzle with the Bang Bang sauce. Garnish with finely sliced green onions and additional sesame seeds if desired. Serve immediately and enjoy.
